Ingredients

  • 1 lb carrots, scrubbed, with tops and bottoms trimmed
  • 1 c unsweetened orange juice
  • 2 T cold water
  • 1 T cornstarch
  • 1/2 c walnuts, chopped

Preparation

Slice carrots and boil covered in orange juice until crisp tender. In separate bowl combine water and cornstarch to make a paste. Add the paste to the carrots and stir until clear and thickened. Stir in walnuts.
