Ingredients
- 1 lb carrots, scrubbed, with tops and bottoms trimmed
- 1 c unsweetened orange juice
- 2 T cold water
- 1 T cornstarch
- 1/2 c walnuts, chopped
- salt & fresh ground pepper
Preparation
Slice carrots and boil covered in orange juice until crisp tender. In separate bowl combine water and cornstarch to make a paste. Add the paste to the carrots and stir until clear and thickened. Stir in walnuts. Season with salt and pepper to taste.
