Ingredients

  • 2 6-inch Italian bread shells (Boboli) or 1/2 batch of Pioneer Woman's Pizza Dough
  • 1/4 c bottled creamy Caesar salad dressing
  • 2 c fresh spinach, torn
  • 2 oz smoked salmon, flaked with skin and bones removed
  • 1/4 c walnut pieces, toasted
  • 1/4 c Parmesan cheese, finely shredded
  • 2 T green onion, thinly bias-sliced (optional)
  • 1 t drained capers (optional)

Preparation

Preheat oven to 400°. Lightly spread bread shells with some of the dressing. Place bread shells on a baking sheet.

Top bread shells with spinach, salmon, walnuts, half of the Parmesan cheese, the green onion, and capers.

Bake, uncovered, for 8 to 10 minutes or just until heated through. Drizzle with remaining Caesar dressing; sprinkle with remaining Parmesan cheese.
