This can be made ahead and frozen to use when needed for recipes.

Ingredients

  • 2 c heavy cream
  • 16 oz bittersweet chocolate, chopped

Preparation

Heat the cream to just below a boil, when bubble appear around the edges of the saucepan.

Pour it over the chopped chocolate and let sit for 5 minutes.

Gently whisk until smooth. Try not to create air bubbles.

To use as a glaze, cool (or reheat) to between 80° and 85°F.
