Made this for Thanksgiving in 2001. Jan rated it "Good!"

Ingredients

  • 4 c peeled tart apples
  • 3 c sliced almonds
  • 1 1/2 c chopped onion
  • 1 1/2 c chopped celery
  • 1/2 c butter
  • 2 t salt
  • 2 t cinnamon
  • 2 t poultry seasoning
  • 2 c raisins
  • 1 c apple cider or juice
  • 1/2 c egg substitute
  • 1 1/2 c water
  • 12 c cubed whole wheat bread

Preparation

Preheat the oven to 325. Grease a 3(?) qt casserole or 9x13 pan.

In a large skillet, melt the butter, and saute the apples, onions, celery, and almonds. Remove from the heat, and stir in the seasonings.

In a large bowl, combine the bread cubes, raisins, and apple mixture. Add the cider and egg substitute. Toss to coat, and pour into the greased pan. Cover. Bake 30-40 minutes at 325, then uncovered for 10 minutes.
