Ingredients

  • 1/4 c water
  • 1/2 t kosher salt
  • 1/2 t freshly ground black pepper
  • 1 T olive oil
  • 1 lb green beans, trimmed

Preparation

Stir together the water, salt, and pepper and have ready by the stove. In a wide saute pan with a lid, heat the olive oil over medium-high heat until it shimmers and nearly smokes. Add green beans in a single layer, stir quickly to coat in oil, and then leave alone for 3 to 4 minutes, until they start to brown. Stir in water mixture and immediately cover the pan. Steam 3 minutes and then remove the lid and continue cooking until all the water has evaporated. Serve immediately.
