Ingredients

  • 2 lb asparagus
  • 18x24" sheet heavy foil
  • 3 T butter
  • salt & pepper to taste

Sauce

  • 1 c light sour cream
  • 2 T red wine vinegar
  • 1/4 c Dijon mustard
  • 2 t sugar
  • 1/3 t crushed red pepper (optional)

Preparation

Preheat oven to 450° or grill to mid-high.

Center asparagus on foil; top with butter. Bring up sides and double-fold ends to seal, making a large packet. Bake 14-16 minutes on a cookie sheet in an oven or grill 7-9 minutes in covered grill. Open foil; season with salt and pepper.

Sauce: Combine all ingredients and microwave on high 1.5-2 minutes or until warm. Serve sauce over asparagus.
