Ingredients

  • 1 lb red or golden potatoes
  • 3-4 cloves garlic
  • 2 T butter
  • 1/4 t Lawry's seasoning salt
  • Pioneer Woman's Pizza Dough
  • 2 c shredded cheddar cheese
  • 2 c broccoli florets, cut into bite size pieces
  • 1 c diced tomato
  • 1/4 lb bacon, cooked and chopped
  • red pepper flake (optional)
  • Kosher salt and fresh ground black pepper to taste
  • 1/2 t dried rosemary (optional)
  • 1/2 t dried oregano (optional)
  • sour cream

Preparation

Preheat the oven to 450°.

Peel the potatoes (if desired), quarter them, and add them to a pot, covered with water. Peel and add the garlic to the pot with the potatoes. Boil until the potatoes are cooked. Drain the water. Add the butter and Lawry's seasoning salt, and mash the potatoes and garlic. Set aside.

Par-bake the crust for 7 minutes.

Lightly brush olive oil over the crust. Add a light sprinkling of salt. Spread the mashed potatoes over the crust. Cover with the cheddar cheese. Scatter the broccoli and tomatoes over the cheese. Sprinkle the bacon pieces over. Sprinkle red pepper flake, rosemary, and oregano over all. Season with salt and pepper to taste.

Bake for ~15 minutes, or until the broccoli is starting to char.

Serve with sour cream on the side.
