Ingredients
- Pioneer Woman's Pizza Dough
- EV olive oil
- 1 lb butternut squash, cubed
- 1 t oregano
- 1/2 t chipotle
- ~4 oz fresh spinach
- 1 lb fresh mozzarella
- 4-6 oz blue cheese
- 1/2 lb bacon
- salt & pepper
- balsamic vinegar
Preparation
Preheat the oven to 500°.
Toss the squash with 1-2 T olive oil, oregano, and chipotle, and saute or roast until just tender.
While the squash is cooking, slice the bacon into small pieces and fry until done, but still soft. Remove to a plate lined with paper tower to drain.
Prepare the pizza crust and parbake for 6-8 minutes.
Drizzle/brush 1-2 t olive oil on the crust. Spread the spinach over the crust. Add the mozzarella cheese over the spinach. Spread the squash over the mozzarella. Crumble and sprinkle the blue cheese over the squash. Sprinkle the bacon pieces over all. Sprinkle a little more chipotle over the pizza. Season with salt and pepper. Lightly drizzle balsamic vinegar over all.
Bake for 10-13 minutes at 500°.
