We made this for Alaric's baptism, and it was absolutely delicious.

Ingredients

  • 1 3.5-4 lb beef brisket, at room temperature
  • 2 T Quito's Butt Rub or store-bought barbecue rub
  • 1/2 c packed light brown sugar
  • 1/4 c Worcestershire sauce
  • 2 T balsamic vinegar
  • 1 c Chipotle-Maple Barbecue Sauce, or your favorite bottled sauce
  • 1 c beer

Preparation

Sprinkle the brisket with the butt rub. Stir the brown sugar, Worcestershire sauce, and vinegar together in a shallow dish; pour over the brisket and turn several times to coat the meat evenly. Cover and marinate in the refrigerator for at least 6 hours or overnight. Bring the meat to room temperature before cooking.

Preheat the oven to 350 F and prepare a hot fire in a charcoal or gas grill.

Remove the brisket from the marinade and place it over the hot coals to sear until the outside is slightly charred, 4-6 minutes per side.

Place the seared brisket in a large cast-iron or other ovenproof skillet and pour the marinade over it. Stir the barbecue sauce and beer together and pour over the brisket. Turn to coat the brisket evenly on all sides.

Cover the skillet with aluminum foil or a lid and roast the brisket for 3 hours to 3 hours 30 minutes, until it pulls apart easily with a fork. Remove the brisket from the oven and serve warm, with additional warm barbecue sauce drizzled over the top or served on the table.
