Chocolate Covered Peanut Butter Balls

Ingredients

  • 3 T butter, melted
  • 1 c powdered sugar
  • 1 c peanut butter
  • 2 c Rice Krispies
  • 1 c (6 oz) chocolate (bars or chips, milk or dark)
  • 1/2 bar paraffin wax[1]

Preparation

Melt the butter in a saucepan over low heat. Add peanut butter and powdered sugar. Stir until combined. Remove from heat and mix in the Rice Krispies. Allow to cool.

Make peanut butter balls and set aside.

If using paraffin, melt the paraffin and mix in the chocolate chips. Otherwise, melt 3/4 cup of the chocolate until just melted (about 104-113°F). Remove from heat, and stir in remaining chocolate until fully melted and cooled slightly (84-91°F).

Dip each peanut butter balls in chocolate to coat. Set aside to cool and dry. Rewarm the chocolate as needed.

Notes

  1. Paraffin wax is used instead of tempering the chocolate.
