Ingredients
- 4 c grated potatoes
- 2 eggs, beaten
- 2 T flour
- 1/4 t salt
Preparation
Grate potatoes in a pan of water. Just before using, drain well and pat dry between paper towels. Add beaten eggs, flour and salt. Mix well. Drop 1/2 cup of mixture on griddle that has been oiled well and flatten. Fry until golden brown on both sides. May be served with sugar, syrup, or applesauce.
