Ingredients

  • 12 medium potatoes
  • 12 bacon strips
  • 1 1/2 c chopped onion
  • 1/4 c flour
  • 1 T salt
  • 1 t celery seed
  • 1 t ground mustard
  • pepper
  • 1 1/2 c water
  • 3/4 c vinegar
  • parsley

Preparation

Cook potatoes. Peel and slice. Cook bacon, keep 1/3 c of drippings. Saute onion in drippings. Stir in next 6 ingredients. Gradually stir in water and vinegar, bring to a boil, stirring constantly. Cook and stir 2 minutes. Pour over potatoes. Crumble bacon and gently stir into potatoes. Sprinkle with parley.
