Ingredients

  • 1 1/2 c all-purpose flour
  • 1/2 c sugar
  • 1 T baking powder
  • 1 1/2 t ground cinnamon
  • 1 t ground ginger
  • 1/2 t ground cloves
  • 1/4 t salt
  • 1 c whole milk
  • 1/2 c pure pumpkin puree
  • 1/4 c molasses
  • 4 T unsalted butter, at room temperature
  • 1/4 c vegetable oil

Preparation

Heat a waffle maker to high heat.

In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, ginger, cloves, and salt. In a medium bowl, combine the milk, pumpkin, molasses, butter, and oil. Stir into the dry ingredients until the batter is smooth.

Spray the waffle maker with nonstick cooking spray, and spoon 1/2 cup of the batter into each mold. Close the cover and cook for 8 to 10 minutes for crisp waffles. Repeat with the rest of the batter, especially the nonstick spray.

Note: These waffles typically need extra time to cook past the automatic timer.
