Ingredients
- 1 pkg (10 oz) frozen, chopped broccoli, cooked and drained
- 6 hard-cooked eggs, halved
- 1/4 c mayonnaise
- 2 T Dijon mustard
- 1/4 c chopped fully cooked ham
Cheese Sauce
- 2 T butter/margarine
- 2 T all-purpose flour
- 1 1/4 c milk
- dash salt and pepper
- 1 c shredded cheddar cheese
- 2 T grated Parmesan cheese
Preparation
In a greased 11x7x2" baking dish, layer broccoli and eggs. Combine the mayonnaise, mustard and ham; spread over eggs. In a saucepan, melt butter, add flour. Cook and stir until bubbly. Gradually add milk, salt and paprika; cook and stir until boiling. Cook and stir two minutes more. Remove from heat; stir in cheddar cheese until melted. Pour over casserole. Sprinkle with Parmesan cheese. Bake, uncovered, at 400° for 10-12 minutes or until heated through.
