Ingredients
- 2 medium baking potatoes
- 1/2 c cottage cheese
- 3 T mayonnaise
- 2 t prepared mustard
- 1/2 t dill weed
- 1/4 t salt
- 1/8 t pepper
- 1/2 c plus 1 T shredded cheddar cheese, divided
- 1 hard-cooked egg, chopped
Preparation
Bake potatoes at 375° for 1 hour. Cool. Mash pulp with cottage cheese, mayo, mustard, dill, salt and pepper. Stir in 1/2 c cheddar cheese and egg.
Spoon into shells. Top with remaining cheese. Bake at 375° for 25-30 minutes.
