Ingredients
- 4-6 salmon fillets (no skin)
- 3 T extra virgin olive oil
- fresh ground pepper
- 3/4 c pesto
- 1/2 c Parmesan cheese, grated
- 3 plum tomatoes, sliced (optional)
Preparation
Preheat oven to 350°F.
Lightly coat a baking pan with cooking spray. Place each salmon fillet in the baking pan and drizzle with olive oil. Season each fillet with freshly ground pepper. Gently spread pesto over each fillet. Sprinkle parmesan over each fillet. Place tomato slices on each fillet and sprinkle with a little more parmesan.
Bake the fillets for 15-20 minutes or until the fish flakes easily with a fork.
