Ingredients

  • 1/2 c butter/margarine
  • 1 pkg (10-12 oz) vanilla chips
  • 2 eggs
  • 1/2 c sugar
  • 1 t almond extract
  • 1 c flour
  • 1/2 t salt
  • 1/2 c seedless raspberry jam
  • 1/4 c sliced almonds

Preparation

In pan, melt butter. Remove from heat; add 1 c chips (don't stir). Beat eggs until foamy; gradually add sugar. Stir in chip mixture and almond extract. Combine flour and salt; add to egg mix just until combined. Spread half of batter into greased 9x9 pan. Bake at 325° for 15-20 minutes.

Over low heat, melt jam; spread over warm crust. Stir remaining chips into remaining batter; drop by teaspoonfuls over jam layer. Sprinkle with almonds. Bake 30-35 minutes longer until tests done. Cool on wire rack.
