Ingredients
- 4 c chopped rhubarb
- 1 1/3 c white sugar
- 6 T all-purpose flour
- 1 T butter
- 9-inch double crust pie pastry (use your favorite pie crust recipe)
Preparation
Preheat the oven to 450°.
Combine the sugar and flour. Sprinkle 1/4 of it over the pastry in the pie plate. Heap the rhubarb over the sugar mixture. Sprinkle the remaining sugar and flour. Dot with small pieces of butter. Cover with the top crust.
Place the pie on the lowest rack in the oven. Bake for 15 minutes. Reduce the oven temperature to 350°, and continue baking for another 40-45 minutes. Serve warm or cold.
