Ingredients

  • 1 c rinsed wild rice
  • 2 (13 3/4 oz) cans chicken broth
  • 6 slices bacon
  • 1 c chopped onion
  • 1/4 lb sliced mushrooms
  • 1/4 t thyme
  • 1/4 t marjoram
  • pepper
  • 3/4 c diced carrots

Preparation

Boil the rice in the chicken broth for 35-40 minutes; do not drain.

Saute bacon until crisp, drain, reserving 3 T drippings. Saute onion in 3 T bacon drippings. Stir in mushrooms and seasonings. Combine all in 2-qt casserole dish. Bake covered at 350° until bubbly, 35-40 minutes. Let stand for 5 minutes.
